Louisiana Pulled Pork Carnitas Sliders
Makes 10 sliders

1 cup BBQ Sauce
1 16oz Del Real Foods® Carnitas
3 Tbsp. Apple Cider Vinegar
10 each Slider Buns
1 ¼ cup Cole Slaw Cabbage Blend
1/3 cup Remoulade (see recipe)
In a small saucepan, heat BBQ sauce over medium heat. Add carnitas and vinegar. Stir until heated throughout and sauce is incorporated into the meat. Add more BBQ sauce if needed. Set aside and keep warm.
Spread a thin layer of butter on the inside of each slider bun. Place on a skillet heated over medium heat. Heat bun until golden brown.
In a mixing bowl, combine the Cole Slaw mix and the remoulade. Place about ½ ounce Slaw on bottom of each slider. Top with 1 ½ ounces BBQ Pork. Top with slider bun. Serve immediately.
Yields 1 ¾ cup
¼ cup Fresh Lemon Juice
½ cup Chopped White Onion
½ cup Sliced Green Onion
¼ cup Chopped Celery
2 Tbsp. Chopped Garlic
3 Tbsp. Whole Grain Mustard
3 Tbsp. Ketchup
3 Tbsp. Chopped Fresh Parsley
1 tsp. Salt
Pinch Cayenne Pepper
Black Pepper to taste
½ cup Canola Oil or Light Olive Oil
1) Place all ingredients except for the oil in a food processor. Blend. Slowly add oil as mixture is blending. Remove from processor and set aside.
