Bacon Bites

  • Del Real Tamales-any type
  • 8-12 precooked bacon strips
  • 8 oz Mexican Velvetta Cheese – cubed
  • 1 cup Mexiblend shredded cheese
  • 5oz can evaporated milk
  • 1/3 – 1/2 cup Del Real Salsa Roja – to taste
  • 1 – 2 tsp ground Chilpotle Chile Pepper

1. Pre-heat oven to 400 degrees. 2. Unwrap a tamale and cut into 12 bite size pieces. 3. Wrap a strip of bacon around each bite and secure with a toothpick. 4. Place the bites on a baking rack and bake in the hot oven for 10-15 minutes until the bacon is hot and crispy. 5. While the bites are baking, place all of the cheese dip ingredients into a microwave safe bowl. 6. Place in the microwave and heat on med-high for 5-8 minutes. Stir halfway though. 7. Continue heating until the cheese is melted. Serve the bacon bites and Chipotle Cheese Dip while hot.


 

Corn Beef Bilini

For Blini:

  • 1/4 cup each of corn meal and all-purpose flour
  • 1/4 tsp salt
  • 1/2 tsp sugar
  • 1/2 tsp cumin
  • 1/4 tsp baking soda
  • zest half of lime
  • 1/4 tbsp chopped fresh cilantro
  • 1/2 beaten egg
  • 1/4 cup+2 tbsp milk (until pourable consistency)

For Beef:

  • 1 cup Del Real Seasoned Shredded Beef
  • 1/2 tbsp oil
  • 2 tbsp diced red bell pepper
  • 2 tbsp diced red onion
  • 3 tbsp Del Real Fire Roasted Green Salsa

For Garnish:

  • 1/4 cup sour cream (with a squeeze of lime juice)
  • 6 thin jalapeno slices
  • 3 tbsp red onion, sliced thin
  • 1/2 white vinegar
  • pinch of salt

1. Bring vinegar to a boil and add sugar and salt to dissolve, pour over onion in a bowl, set aside 2. Whisk together all blini ingredients in a bowl, set aside. 3. In medium hot skillet, add oil, peppers and onions, let cook for a couple minutes until softened. Add beef and salsa and stir together, put on low heat, begin making blini 4. In a non-stick pan, add oil to coat bottom. Pour 6 portions of 1 tbsp blini batter. When bubbles appear, flip and let finish for a minute. 5. Remove blini. Top with equal portions of hot beef mixture, cheddar cheese, pickled onion, sour cream and jalapeno slices

INGREDIENTS

  • Large raw tortillas
  • Seasoned Shredded Beef – Del Real Foods
  • Sliced cherry tomatos
  • Avocado cremé sauce (recipe below)
  • Cotija (mexican cheese)

DIRECTIONS

1. Cut raw tortillas into 3″ round circles 2. Place raw tortillas in muffin pan to make small cups. 3. Bake at 350º for 8-12 minutes (keep a close eye not to burn) 4. Cook Seasoned Shredded Beef according to package instructions. 5. Make Avocado Cremé sauce – Blend together 2 large ripe avocados, 3/4 cup greek yogurt, 1 lime juiced, 1/2 tsp cumin, salt, pepper, 1/4 tsp paprika, 1tsp fresh chopped cilantro. Add chicken or veggie broth as needed for desired texture. I put mine sauce in a small baggie and cut a small hole to make drizzle effect. 6. Put it all together in this order… Tortilla cups Shredded beef Sliced tomatos Avocado cremé sauce Crumbled cotija Chopped cilantro 7. Enjoy!

  • 1-16oz Del Real Foods Carnitas, cut into 1/2 inch cubes
  • 2 cups Del Real Foods Ranchero Beans
  • 1 baguette
  • Tomato compote
  • 1 cup grape tomatoes, quartered
  • 1 cup teardrop tomatoes, cut in half
  • 1 tablespoon shallot, minced
  • 1 garlic clove, minced
  • 2 tablespoons chives, chopped (reserve tips for garnish)
  • 1 tablespoon basil, chopped
  • 1 sprig oregano, fresh
  • 3 sprigs thyme, fresh
  • A/N chili flakes

QUESO FRESCO FOAM

  • 1.5 cups Queso Fresco
  • .5 cup sour cream
  • A/N (As Needed) Milk, for consistency
  • A/N Salt Black pepper
  • A/N Olive Oil, Extra Virgin

DIRECTIONS

1) Cut the baguette at an angle into 1/2 inch thick slices. Place on a sheet tray, drizzle olive oil on top, lightly sprinkle with salt and black pepper. Place in oven at 375 degrees for 10 minutes, or until golden brown. 2) Cut the carnitas and cook in a cast-iron skillet on medium heat with about a tablespoon of olive oil. Put beans to reheat in a small pot. 3) Make the foam by adding queso, sour cream, milk (as needed), S & P into the blender, blend until it reaches a thick consistency and store in fridge. 4) In a separate pan on medium high heat, cook the minced shallot/garlic to golden brown; add the tomatoes/oregano/thyme with a splash of water, season with salt & pepper, and cook for about 10 minutes until tender and almost all liquid has evaporated.Once off the heat, fold in the remaining herbs. PLATING On each crostini add a small spoonful of beans, top with 5 pieces of carnitas. Place a small spoonful of the tomato compote on top, then place a dollop of queso fresco “foam”, and stick two chive tips into the foam, serve.

  • 3 Del Real Foods Cheese and Green Chile Tamales, prepared to microwave directions
  • 6 3″ jalapeno peppers, halved, de-veined and de-seeded
  • 6 strips of bacon, uncooked
  • 1/2 cup quesadilla cheese, or Monterrey Jack, shredded

Pre-heat oven to 400 degrees; line jelly-roll pan with aluminum foil, or parchment paper. In a mixing bowl, combine tamales, and cheese, discarding corn husk wrappers. Mash, and scoop mixture evenly into halved jalapenos. Slice bacon strips into halves, wrapping around each halved jalapeno, and secure with wooden toothpick. Bake at 400 degrees for 20 minutes, adding additional time as needed for desired bacon crispness. Serves 6, appetizer portion of 2 per person.
