Cheese Tamale Fritters
Makes approximately 40 fritters
½ cup Minced Cilantro
1/3 cup Diced White Onion
1 Del Real Foods® Vegetarian Cheese & Chile Tamales (4 Tamales needed)
2 cups Liquid Egg Product (or 2 eggs scrambled with 3 Tbsp Water)
2 cups Panko Bread Crumbs
1 Del Real Foods® Salsa Molcajete Verde or Roja (1 ½ cups salsa needed)
Cooking Oil for frying
•Combine cilantro and onion in a bowl. Set aside.
•Place cooking oil in a large skillet to a 1” depth. Heat oil over medium high heat. The ideal frying temperature is 350°F.
•Unwrap tamales and slice crosswise into ½” thick pieces.
•Place liquid egg and panko crumbs in separate pie pans. Carefully dip each tamal slice into egg batter, then coat in bread crumbs. For best results, use tamales that are well chilled. It may be necessary to squeeze tamal masa together to keep fritter from crumbling apart while frying.
•Place fritter in hot oil and fry until golden brown. Remove from oil with tongs and place on a paper towel lined plate to drain excess oil.
•Top with 1 teaspoon salsa and sprinkle with cilantro/onion mix. Serve immediately.
