Barbacoa Mini Sopes Recipe

Mini Sopes

Yields 12 sopes

1 16oz Del Real Foods® Beef Barbacoa (10 oz needed)

Cooking Oil

12  Mini Sopes

1 16oz Del Real Foods® Refried Beans, warm (1 cup needed)

2 cups  Shredded Cabbage

¼ cup  Mexican Crema or Sour Cream

1 cup of Del Real Foods® Salsa Molcajete Verde (¾ cup needed)

1/3 cup  Crumbled Cotija Cheese


Remove any excess fat or sinew from the Beef Barbacoa. Heat in a pan over medium heat. Keep warm.

Place cooking oil in a large skillet to a 1” depth. Heat oil over medium high heat. The ideal frying temperature is 350°F.

Fry the sopes for about 1 minute per side or until golden. Remove with tongs, and allow to drain on a paper towel lined plate.

Spread 1 Tablespoon of Refried Beans over each sope. Drain off excess liquid from Beef Barbacoa and place one heaping Tablespoon on top of beans. Top with 2 Tablespoons lettuce, 1 teaspoon crema, followed by 1 Tablespoon Molcajete Verde Salsa and 1 teaspoon Queso Fresco. Repeat with remaining sopes. Serve immediately.
