Ingredients:


  • 1 package of 6 Del Real Foods Sweet Corn Tamales, husks removed
  • 1 package mirepox blend, or 1 cup each onion, celery, carrots
  • 1 poblano pepper, diced, veins and seeds removed
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 tsp poultry seasoning
  • 1 tsp chili powder
  • 1 cup broth, low sodium is fine, chicken or vegetable
  • Salt and pepper to taste


Instructions:

Preheat Oven to 425 degrees

In a large skillet, sauté vegetables, and garlic in olive oil for 8 minutes over medium high heat, stirring as needed

Add seasoning and broth, cook for 2 more minutes

In a large bowl, break tamales apart

When vegetables have cooked, add to tamale mixture and stir to combine

Pour into a greased casserole dish

Bake covered with foil for 10 minutes, remove foil and bake an additional 10 minutes
