- Ingredients :
- 1 yellow onion, diced
- 1 bell pepper, diced
- 4 cloves of garlic, finely chopped
- 1 cup oil, divided
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1 tsp ground coriander
- 16 oz low-sodium chicken broth
- 16 oz Del Real Foods Pollo Asado
- 2 medium tomatoes, diced
- 1 can frijoles negros
- 1 can of white corn (frozen, fresh or canned)
- 1 lime juiced
- 1/2 cup fresh chopped cilantro
- Salt and pepper
- Optional: for extra vegetables you can
- Add chopped celery
- For serving:
- Del Real Foods Salsa De Molcajete Roja
- Tortilla strips
- Cotija cheese
- Diced avocado
- Sour cream
Heat Slow cooker to high and add 2 TBSP oil and allow to heat and create a sheen.
Add onion, bell pepper and garlic and sauté for 2 minutes or until soft.
Add chili powder, cumin, paprika and coriander and saute for another minute until spices are fragrant.
Add broth, diced tomatoes and Del Real Foods Pollo Asado. Cover and cook on low for 2 hours.
Remove chicken and shred and put back in slow cooker.
Add black beans, corn, cilantro and lime juice. Cook another hour.
While the soup is cooking, heat the remaining oil to 350˚F in a shallow pan.
Cut 4 tortillas in ¼ – ½ “ strips and fry in oil for about a minute or until golden.
Remove and drain on a paper towel and sprinkle with salt.
Season soup with Del Real Foods Salsa De Molcajete Roja.
Serve soup warm and top with diced avocado, sour cream, crispy tortilla strips and cotija cheese.
