Chipotle Chicken Fried Rice

Ingredients:


  • Del Real Foods Products
  • 1 - 16 oz. package of Del Real Arroz, Mexican rice.
  • 1 - 16 oz. package of Del Real Chipotle Chicken Tinga
  • 2/3 Cup of Del Real Fire Roasted Green Salsa (the heat is not much but you can use
  • salsa verde)

  • Rice
  • 4 Tablespoons Vegetable Oil
  • 2 Eggs (additional eggs for each portion if you want to do fried eggs on top)
  • ½ Cup of Diced Scallions
  • 5 Cloves Diced Garlic. (adjust to your preferences)
  • Salt to taste

  • Garnish
  • ¼ Cup Cilantro to garnish.


Instructions:

Heat a large (preferably cast iron) pan/wok over high heat. Pour in oil, then stir in diced garlic; cook
until garlic starts to change color. While waiting for garlic mix all the rice together with the two eggs
after they have been beaten well (I would salt the eggs before adding to rice) . Stir in the rice let it sit
for a few minutes. When rice looks like its getting some crispness and color stir. Prepare your
Chipotle Chicken Tinga by dicing it. Add the chicken and the salsa to the pan. Heat through. When
that happens add your scallions and cilantro (and the fried egg is you are so inclined). Serve and
enjoy!
