Ingredients:


  • Del Real Foods Product
  • 1 - 16oz. Del Real Barbacoa, heated (according to package instructions) and meat shredded

  • Butternut Squash Sauce
  • 2 ½ Teaspoons Olive Oil
  • ½ Onion - chopped, medium dice
  • 1 Garlic Clove - Minced
  • 1 pound Butternut Squash chopped into ½ Pieces
  • 1 Sprig Thyme
  • 1 Sage Leaf
  • 2 Cups Chicken Stock
  • 1 Teaspoon Salt
  • 4 Cups Kale washed- chopped

  • Pasta
  • ½ lb. Orecchiette Pasta, cooked according to package directions
  • Water

  • Garnish
  • Pomegranate Seeds for Garnish


Instructions:

1. In a large pan, heat 1 ½ teaspoons of olive oil and sauté onion, garlic and butternut squash with
thyme and sage. Once onion is translucent, add 1 cup of chicken stock, cover and simmer until
squash has softened, approximately 10-15 minutes. Remove and discard herbs. Transfer squash and
vegetable mixture to blender with remaining 1 cup of chicken stock and salt; liquefy until sauce is a
smooth consistency.
2. Heat remaining 1 teaspoon of olive oil in a pan, add kale and season with salt to taste. Sauté kale
for a minute and add butternut squash sauce to pan and mix with kale. Bring sauce to a simmer, and
remove from heat. Add cooked pasta and mix with sauce to coat.
3. Transfer pasta and sauce to a serving platter and place Del Real Foods Barbacoa on top of pasta.
Garnish with pomegranate seeds. Serve immediately
