Barbacoa “Sloppy Jose” Sandwiches

Ingredients:


  • 4 hawaiian hamburger buns
  • For the pineapple jam:
  • 2 cups frozen pineapple
  • 1 tbsp white sugar
  • 1 tbsp brown sugar
  • 1 star anise
  • 1 clove
  • 2 tbsp dark rum
  • juice of 1 lime
  • pinch of salt
  • For the slaw:
  • 2 Tbsp vegetable oil
  • 2 Tbsp white vinegar
  • 1/2 Tbsp sherry vinegar
  • 1 Tbsp water
  • 1 clove garlic, chopped
  • 1/2 Tbsp sugar
  • 1/4 Tbsp salt
  • 1/4 head of green cabbage, cored and thinly sliced
  • 1 handful cilantro, chopped
  • For the beef:
  • 1 package Del Real Barbacoa Beef
  • 1 tbsp olive oil
  • 1 poblano pepper, diced
  • 1/2 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp ketchup
  • 2 tbsp brown sugar
  • 1/2 tbsp worcestershire
  • salt + pepper


Instructions:

1. Place a sauce pan on high heat, and a large skillet on medium.
2. Put all of the pineapple jam ingredients in a sauce pan, bring to boil, and reduce to a simmer. Hit with a few pules of an immersion blender or a masher to break up the pineapple punch. Let simmer until reduced to jam consistency, then take off heat until time to assemble.
3. Combine the cabbage and cilantro in a bowl. Blend all of the remaining slaw ingredients, and then pour over cabbage, tossing to coat evenly. Refrigerate until time to assemble sandwiches.
4. Add olive oil, garlic, poblano peppers and onion to skillet, season with salt and pepper. Saute, stirring occasionally, until softened.
5. Toast hamburger buns.
6. Meanwhile, in food processor, add barbacoa beef, brown sugar, worcestershire, ketchup. Pulse until evenly combined and meat has broken down.
7. Add beef mixture to skillet and combine with peppers and onions. Season with salt and pepper, to taste.
8. Assemble: Add layer of cole slaw to bottom buns, then divide meat, and then pineapple jam and enjoy!
