Fiesta Tostada Bowl

Serves 6 portions

Ingredients:
1 cup Del Real® Salsa de Molcajete Roja
1 cup sour cream
8 fried flour or corn tostada shells
2 heads iceberg lettuce, shredded
1 (1.5 lbs.) package Del Real® Refried Beans, heated
1 (1.5 lbs.) package Del Real® Mexican Rice, heated
2 cups shredded cheddar cheese
1 (32-oz.) package Del Real® Chile Verde, heated
2 cups each: coarsely chopped radishes and diced tomatoes
1 ripe avocado, sliced
3 fresh limes, cut into quarters
1/2 cup salted pepitas (Mexican pumpkin seeds)

     
Instructions:    

In bowl, stir together Del Real® Salsa de Molcajete Roja and sour cream to make a roasted salsa dressing; set aside. Evenly divide and begin layering tostada shells with shredded lettuce, Del Real® Refried Beans, Del Real® Mexican Rice, cheese, Del Real® Chile Verde, radishes, tomatoes and sliced avocado. Squeeze fresh lime over tostada bowls before drizzling with the roasted salsa dressing. Garnish with pepitas and serve immediately. Makes 8 entrée servings.
