Asian Pork Tostada with Wasabi Guacamole

Ingredients

  • Dozen Small Corn Tortillas
  • 1⁄4 cup Soy Sauce
  • 1 Tbsp. Oyster Sauce
  • 2 Tbsp. Mirin
  • 1 pound Pork Carnitas
  • 1 Tbsp. vegetable oil
  • 2 Tbsp. Ginger
  • 2 Tbsp. Garlic
  • 1 tsp. Thai Chili or Serrano chili
  • 1 Cabbage, finely shredded
  • 1 cup Carrots, finely shredded
  • 1 cup Radish or Daikon (Asian radish) julienne slices
  • 1⁄2 cup Green Onions, minced
  • 1⁄2 cup Cilantro leaves
  • Peanut or Vegetable for frying

Procedure

  1. Heat peanut or vegetable oil in deep skillet. Fry tortillas in oil until crispy. Set aside.
  2. Mix the soy sauce, oyster sauce, and mirin and set aside. Heat 2 Tablespoons of oil in sauté pan. Add the ginger, garlic and chile. Add the pork carnitas and the sauce. Mix to combine.
  3. Place 1⁄4 cup of pork on tostada shells. Top with 1⁄4 cup of cabbage, carrot, radish, green onions and cilantro. Top with Wasabi Guacamole. Garnish with Sriracha sauce. Serve with soy dipping sauce.

Soy Dipping Sauce

Ingredients

  • 1⁄4 cup Soy Sauce
  • 1⁄4 cup Seasoned Rice Vinegar
  • 1 Tbsp. Dark Sesame Oil
  • 1 Tbsp. Water
  • 1 Tbsp. Ginger
  • 1 Tbsp. Garlic
  • 1 Tbsp. Green Onions
  • 1 tsp Sesame Seeds

Procedure

  1. Mix all ingredients

Wasabi & Sriracha Guacamole

Ingredients

  • 2 cups Fresh Avocado (2 large Avocados)
  • 1⁄2 Tbsp-1 Tbsp. Wasabi (according to preference)
  • 1 tsp Dark Sesame Oil
  • 1 tsp Seasoned Rice Vinegar
  • 1 tsp Soy Sauce
  • 2 Tbsp. Lime Juice, fresh squeezed
  • 1⁄4 tsp Salt
  • Sesame Seeds garnish

Procedure

  1. Scoop out avocado pulp and add remaining ingredients. Mash ingredients with potato masher. Garnish with sriracha and sesame seeds
