Biography

Chef Aaron J. Perez is a graduate of the Le Cordon Bleu School of the Culinary Arts and a member of the American Culinary Federation and owner of VaKA Burger. Aaron J. has worked in some of the top michelen star restaurants in the world, including La Cachette, Rivera, and Providence and alongside noted chefs such as Wolfgang Puck, Bobby Flay and Cat Cora, Gordon Ramsey.

A passionate food artist and chef dedicated to constantly learning and improving his craft, Aaron J is carving out a name for himself as a rising star in the culinary world. His expertise in print and television food styling as well as his creative and dynamic culinary approach make him a highly sought after professional across the nation.

Chef Aaron J most recently provided his culinary vision to the First Lady, Michelle Obama, Elton John’s 20th Annual Academy Awards viewing party, George Lopez’s 13th Annual 4th of July Celebration and the Malibu Food and Wine Festival, among many others. Featured in a number of print and television media such as Food Network’s Second Season of Grill It, Alegria Magazine, Padrisimo Magazine, MUN2, Sizzle Real Aunt Heather’s Magical Kitchen produced by Alan Thicke, MTV and local radio, Chef Aaron J also was recently recognized for his culinary talents by taking 1st place at the 1st Annual Battle Chinatown “Summer Nights” as he battled renowned Chef Ji Hong Gu of Philippe Chow L.A. event in Los Angeles, and Food Network’s second season of Cutthroat Kitchen, episode 8 ”A Crepe-y Situation.”

Born and raised in the Boyle Heights section of Los Angeles, Aaron J is a true product of southern California. He graduated from Bishop Mora Salesian High School and has dedicated himself to a variety of local charitable endeavors as a way to give back to the community and culture that has fostered his success.

Chef Aaron J’s philanthropy has benefited important and highly recognized charitable organizations such as The Weingart East Los Angeles YMCA, Self-Help Graphics & Art, CASA 0101, Inner City Struggle, First5LA and many more.

Chef Aaron J. combines top-notch culinary skills with a bright, vibrant, culinary art internationally inspired, and a well thought out classy & posh alluring artistic vision. He has prepared food for both the editorial and advertising side of media for television, print, he has also done menu planning, food event coordination, recipe testing, product concept work and craft work styling.

Carnitas Del Real Banh Mi

Pickling

Ingredients

  • 2 Cups Apple Cider
  • 2 Tablespoons Salt
  • 3 Tablespoons Sugar
  • 1 Jalapeño
  • 1 Cucumber
  • 2 Carrots
  • 1 Onion

Procedure

  1. Peel cucumber, carrots, onion.
  2. Cut in small julienne (thin strips). Cut Jalapeño in thin slices.
  3. In small pot place over medium heat, add apple cider, salt, sugar and boil.
  4. In a bowl add jalapeño, cucumber, carrots, and onion cut, (all vegetables). After pour in
    warm pickling liquid. Allow to set for 30 minutes to an 1 hour (the longer it sets, the
    more flavor).

Glaze

Ingredients

  • 2 Cloves of minced garlic
  • 8oz Hoisin Sauce
  • 4 Tablespoons Vinegar
  • 1 Teaspoon Sesame Oil
  • 2 Tablespoons Soy Sauce
  • 2 Teaspoons grated fresh ginger
  • 3 Tablespoons Del Real Molcajete Red Salsa

Additional Ingredients

  • I Bunch Cilantro
  • 1 Baguette
  • Sesame Seeds (toast in small sauce pan)

Procedure

  1. In a bowl add garlic, hoisin, vinegar, sesame oil, soy sauce, and Del Real Molcajete red
    salsa, and whisk.
  2. Cut baguette in 4 pieces, slice down middle and toast. Heat up Del Real Carnitas as
    directed.
  3. Place carnitas in baguette, drizzle hoisin glaze over carnitas, then place good amount
    of pickled veggies, top with hand picked cilantro sprigs and sprinkle toasted sesame
    seeds.
