Tater Tot Volcanos

Del Real shredded Beef

Crispy tater tots are a kid’s perennial favorite. Add a nice molten lava cheese sauce, shredded beef and some salsa and you have the makings of a great dinner!

Serves 6

  • 1-28 ounce frozen package of crispy tater tots
  • 8 ounces Del Real shredded beef
  • 1/3 cup Taco sauce
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • ¼ teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 8 ounce block cheddar cheese, shredded
  • 1 /2 cup chunky salsa

Preheat oven to 425 degrees or according to package directions Place parchment sheet on baking sheet and spread tater tots out in a single layer. Bake according to package directions or 19-24 minutes or until crispy- turning once. Remove from oven. While tater tots are baking prepare sauce. Heat butter in a saucepan over medium heat. Add flour when melted and whisk until it is combined into a smooth paste. Add milk to pan and whisk, bring to a boil reduce to low and add seasonings, whisk and add cheese. Gently stir. Stir until smooth and keep warm until ready to use. If it thickens a bit more milk may be whisked in. Place meat in a microwaveable bowl and heat 2-3 minutes until hot. Drain liquid and mix in Taco sauce. To serve: Divide Tater Tots into 6 serving dishes and lay a foundation of 6 tots. Place 1/6 portion of meat on top piling it up in the center. Place rest of portion’s tots around beef to form volcano. Pour hot cheese /molten lava down sides from top and add a spoonful of fiery salsa on top. Serve with a small fork. Makes 6 servings.
