Taco Kit Reimagined : PIE !

Del Real AL Pastor Taco Kit (marianted pork,salsa roja , corn tortillas)

I opened my Del Real Taco kit and got inspired. Why not have pie for dinner- a savory Taco Pie!! This pie was cooked on my grill and is a spicy delite!!

  • Cooking spray
  • 1 -10 count Del Real Al Pastor Taco Kit corn tortillas,divided
  • 1-12 ounce package Del Real Al Pastor Taco Kit fully cooked marinated pork, at room temperature
  • 1 cup + 2 tablespoons shredded Cheddar cheese, divided
  • 1 -4 ounce package Del Real Al Pastor Taco Kit salsa roja, divided
  • 1 /2 cup grape tomatoes, divided
  • ½ cup shredded iceberg lettuce
  • 1/3 cup sour cream
  • 2 tablespoons tortilla strips, optional

Preheat my side cook top on grill to medium high Spray cast iron skillet with cooking spray. Place 5 corn tortillas on bottom of pan – overlapping to cover bottom. Looks almost flower like. If pork is still too cold heat in a small pan for a couple of minutes to loosen. Spread pork over center of tortillas. Cover with ½ cup cheese Top with the remaining 5 tortillas .Use about a third of the salsa and cover with a sprinkle and add ½ cup of cheese and m 1/3 more salsa. Place skillet on heat and cover with a cover or foil – cook about 15 minutes or until cheese is melted and pork cooked thru Remove from heat and top with lettuce, tomatoes, sour cream, the remaining 2 tablespoons of cheese and tortilla strips-optional Serves 5
