Chicken Chile Verde

  • 6-8 flour tortillias
  • 1/2 c shredded Monterrey jack
  • 1/2 c shredded cheddar
  • 1 package Del Real Chicken Chile Verde
  • 1 package Del Real Shredded Chicken
  • 4 tbsp butter
  • 1/4 c all purpose flour
  • 1 c sour cream
  • 1 c chicken stock

Butter the bottom of a glass 9 x 9 baking dish Heat both Del Real Chicken entrees according to package instructions With a slotted spoon, separate verde chicken from chile sauce - save sauce In a small bowl, mix the verde chicken and HALF of the shredded chicken Add 1/4 cup Monterrey jack and 1/4 cup cheddar, stir. Place approx 2-3 tbsp cheese and chicken mixture in the middle of a flour tortilla, roll. Repeat until you fill the pan, you should get 6-8 enchiladas! In a medium saucepan melt 4 tbsp butter over low- med heat Slowly add approximately 1/4 cup flour until blended whisk in 1 cup chicken stock whisk in 1 c sour cream whisk in 3/4 cup verde chile sauce pour sauce over enchiladas top with remaining cheese bake at 400 degrees for 15-20 minutes Garnish with avocado and tomato!
