Pollo Pupusa Packets

Arroz, Frijoles Refritos, Pollo Asado, Cheese & Bell Pepper Pupusas

Here is the solution to weeknight dinner stress. A quick meal, that can be put together in minutes, with all of the goodness and authentic taste of homemade.

  • 5 Del Real Cheese & Bell Pepper Pupusas, cut in half
  • 1 & 1/4 cups Del Real Refried Beans
  • 1 & 2/3 cup Del Real Arroz
  • 1 package Pollo Asado, shredded
  • 5 tablespoons Del Real Salsa Roja
  • 1/2 avocado, thinly sliced
  • 1 tablespoon canola oil
  • 2 cloves finely minced garlic
  • 1/2 cup diced onion
  • 1/2 teaspoon Mexican oregano
  • 1/2 teaspoon cumin
  • juice of 1 lime
  • 1 & 1/4 cups finely shredded pepper jack cheese

Preheat the oven to 375 degrees. Cut each pupusa in half so you have a top and a bottom half. Lightly spray a foil square (10""x10"") with cooking spray. Place the pupusa bottom, cut side up, on the foil. In a skillet, saute the diced onion, canola oil, oregano, and cumin for 5-6 minutes. Stir frequently. Stir in the minced garlic and cook for an additional 2 minutes. Stir the saute into the refried beans. Spread 1/4 cup onto each pupusa. Spoon 1/3 cup of Arroz onto the top of the refried beans for each pupusa. Drizzle one tablespoon of Salsa Roja over each pupusa. Shred the Pollo Asado. Add the juice of one large lime. Stir. Evenly distribute the Pollo Asado among the pupusas. Top each pupusa with thin slices of avocado (enough for one single layer). Top each with 1/4 cup of finely shredded pepper jack cheese. Place the top of the pupusa on (cut side down). Wrap tightly in foil. Place the foil packets onto a baking sheet and bake for 25 minutes. Remove from the oven and allow to cool for 5-10 minutes before serving.
