2 = Shredded Chicken & Fire Roasted Salsa

This versatile (hot or cold, for adults or kids) build-your-own chicken wrap looks & tastes like a fiesta! It’s a great way to get kids to eat more veggies too! The flavorful chicken & cream cheese mixture adds fantastic flavor without being too spicy for your kids’ delicate palates. Make ahead the day before for a camping trip, picnic or a work/school lunch! Kids will love making their own pinwheel (Crazy Caterpillar, Monster, or even UFO) creations with friends & family. Served warm, these ooey, gooey, chickenlicious wraps will be remembered & requested… again & again. Try them & have your own party!

  • 1 16 oz. pkg. Del Real Shredded Chicken
  • 1/2 cup Del Real Salsa de Molcajete Roja
  • 1/2 tsp. ground cumin
  • 1 tbsp. finely sliced green onion
  • 1 8 oz. block or container light cream cheese
  • 4 (10 count pkg.) extra large spinach tortilla wraps
  • Optional:
  • 1 cup finely shredded cheddar cheese or other meltable cheese
  • 1 12 oz. pkg. angle hair coleslaw or shredded iceberg lettuce
  • Julienne vegetables (e.g., 1/2 jicama, 1/2 red pepper, 1-2 stalks celery, in thin sliced, long strips)
  • Cilantro (1/2 bunch washed and dried)
  • Light Sour Cream (or plain yogurt)
  • Red Enchilada Sauce and/or hot sauce of your choice
  • For the kids' ""Crazy Caterpillar"", ""Monster"", or even ""UFO"" creation:
  • Sliced olives (for eyes)
  • Pretzel sticks (for legs)
  • Small bell pepper or tomato (kids choice of color)
  • 2 green onions or chives
  • Toothpicks (to hold chive antenna's up)

1. Heat shredded chicken according to microwave instructions. 2. If making warm wraps, when chicken is in microwave, place tortillas in sealed foil in preheated oven at 300 degrees for approximately 8-10 minutes, for soft, warm tortillas. 3. If making cold wraps, just be sure tortillas are at room temperature. This is to ensure pliability without cracking when rolling or wraping up into burrito. 4. Drain chicken and set aside. 5. Puree salsa to smoothe texture. 6. Using a spoon or spatula, mix puree'd salsa with cumin, green onion, & cream cheese, then blend in chicken. 7. Spread tortilla evenly with chicken & cheese mixture all over wrap. 8. Place vegetables in first 3rd to middle of wrap. Leave room to roll up. 9. If making pinwheels, roll up wrap & cut into 1 1/2 inch. rounds. If making wraps, fold up ends, then roll up & slice diagnonally (for presentation). 10. If making cold, tightly wrap up pinwheel with plastic wrap & refrigerate or place in ice chest until ready to serve. If making wraps warm, heat completed wrap on flat griddle or grill to melt cheese and reheat chicken within. 11. Garnish or decorate according to age or preference, & have fun eating your own personalized creation!
