Oven-baked Southwestern Falafel

Frijoles Refritos, Salsa de Molcajete Verde, Cheese and Bell Pepper Pupusas (suggested)

Chickpeas and feta have been swapped for authentic Del Real Foods Frijoles Refritos and cotija cheese. Baked in the oven, these falafel are easy to prepare and are much less messy than their traditional fried counterpart. Keeping with the Mexican theme, boring pita pockets have been replaced with gooey, cheese-filled Del Real Foods Pupusas. While these falafel are great on their own with rice and veggies, or in tortillas, stuffing them in pupusas elevates them even further, and they are nicely-complimented with thin slices of crisp radish, shredded cabbage, rich avocado, flavorful queso fresco, and delicious Del Real Foods Salsa de Molcajete Verde. The only problem might be deciding who gets the trimmed off edge from the pupusas, we won’t tell if you decide to keep it for yourself.

  • 1 cup Del Real Foods Frijoles Refritos
  • 1 egg
  • 2 tbsp Del Real Foods Salsa de Molcajete Verde
  • 2 tbsp crumbled cotija cheese (I used a crumbled cotija-queso fresco blend)
  • ¼ cup fresh cilantro, chopped
  • 3 tbsp flour
  • ½ tsp ancho chile powder
  • ½ tsp cumin
  • Suggested for serving:
  • 1 package Del Real Foods Cheese and Bell Pepper Pupusas, (heated with falafels during last 5 minutes of baking time)
  • Chopped cilantro
  • Queso fresco
  • Thinly sliced radish
  • Sliced avocado
  • Del Real Foods Salsa de Molcajete Verde

Pre-heat oven to 450 degrees. Prepare falafel by combining Del Real Foods Frioles Refritos, egg, spices, flour, cheese, and salsa to form a thick, wet batter. Drop by heaping table spoon onto parchment covered baking sheet, spaced evenly. Bake for 7 minutes. While the falafel are baking, slice radish and avocado for serving, chop cilantro. After 7 minutes, flip the falafel over, if serving with pupusas, place them on the baking sheet. Bake additional 5 minutes, let rest one minute after removing from oven. Slice edge of pupusas, carefully stuffing them with toppings and 1-2 falafel, the cheese filling will be hot. Could also be served alongside grilled vegetables and Del Real Foods Arroz Mexicano, or with hot tortillas or lettuce wraps.
