Mexican Muffuletta Sandwich

Del Real Seasoned Shredded Chicken and Fire Roasted Green Chili Salsa

Muffuletta’s are a NOLA classic. This fun rendition swaps Italian cold cuts for Del Real Shredded Beef and other southwest flavors turning this regional favorite into a fiesta! Ole!

  • 1 Package Del Real Seasoned Shredded Beef
  • 1 Sourdough or Italian Bread Round
  • 12 Slices Pepper Jack Cheese
  • 1 Cup Black Olives
  • 1 Cup Green Olives stuffed with Pimentos
  • ¼ Cup Del Real Fire Roasted Green Salsa
  • 1 ½ limes
  • 2 TBS Cilantro, finely chopped
  • 1 tsp. Chili Powder
  • ¼ Cup Melted Butter

1. Preheat oven to 375 degrees. 2. Cut the top off of the loaf of bread, Set top aside. 3. Scoop out the soft insides of the bread but leave all the crust intact. 4. Line the bottom and inside sides of the bread bowl with the cheese. Reserve 4 slices of cheese for the top layer. 5. Heat Del Real Seasoned Shredded Beef according to package directions. Remove from microwave and shred the beef into finer shreds. 6. Add the cilantro to the beef and the juice from one lime and toss to incorporate. 7. Coarsely chop the green and black olives and add to a small mixing bowl. 8. Add the green salsa to the olives and mix to incorporate. 9. Layer all of the olive mixture on top of the cheese in the bread bowl. 10. Layer all of the seasoned shredded beef on top of the olives. 11. Line the top of the shredded beef with the remaining cheeses, tuck it into all the corners and beneath the edge of the bread. 12. Replace the top of the bread to the round. 13. Add the juice of half a line and the chili powder to melted butter. 14. Brush the chili lime butter all over the top and sides of the bread round. 15. Wrap entire loaf in aluminum foil and place on baking sheet. 16. Weight the sandwich down using a cast iron pan or foil wrapped brick. 17. Bake for 20 minutes. 18. Remove from oven and allow to rest 5 minutes with the brick still on it. 19. Slice into wedges and serve. Tip: Heat the cast iron pan or foiled wrapped brick in the oven while you prep the sandwich. This will help ensure the sandwich gets nicely heated all the way through.
