Kid-Friendly Chicken Quesadilla Waffles

Pollo Asado

Mild, nutritious, and delicious chicken quesadilla waffles filled with shredded chicken, cream cheese, seasonings, corn, carrots, and mozzarella cheese. The perfect meal for kids (and adults too!).

Serves 8

20 Minutes

2-3 Minutes

  • 1 (16 oz) Del Real Foods® Shredded Chicken
  • 4 oz cream cheese, softened (plus extra to spread on tortillas)
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper (optional)
  • 1/3 cup canned yellow whole corn kernels, drained
  • 1/4 cup shredded carrots
  • 16 fajita-sized flour tortillas
  • 2 cups shredded mozzarella or mild cheddar

1. Wash, dry, and chop up your vegetables. Keep them chilled until you're ready to eat your salad. 2. Heat up your pre-cooked chicken. Since we used Del Real Foods Pollo Asado, our chicken took about 5 minutes to heat up completely. 3. Fill a large plate with fresh baby greens. 4. Top off the salad with your chicken, cucumbers, dressing, and sesame seeds. 5. Enjoy!
