Hand Held Taco Salad Bowls

Del Real shredded chicken

This recipe was created as a fun salad for kids! It combines the usual flavors of a great taco salad with the convenience of a small hand held baked  tortilla cup.

Serves 6

15 Minutes

  • 6 Fajita size flour tortillas
  • Cooking spray
  • 1 1/2 cups shredded lettuce
  • 1 1/2 cups Del Real shredded chicken
  • 1 /2 cup Ranch dressing
  • 2 tablespoons taco sauce
  • 6 grape tomatoes ,quartered
  • 2 tablespoons shredded Mexican cheese blend
  • 2 tablespoons taco chips , broken
  • Cilantro sprigs –optional

Preheat oven to 350 degrees Using cooking spray –spray the inside of large size cupcake pan /6 cupcakes Fold the tortillas into each cupcake hole Spray tortilla with cooking spray Bake at 350 degrees for about 8 minutes until firm and they hold their shape. Remove and cool on a wire rack. Place chicken in a microwaveable bowl and micro wave for 1 ½ minutes just to warm. Remove and squeeze liquid from meat – I used a strainer. Mix the ranch dressing with the taco sauce. Divide the lettuce into the tortilla taco cups- add a teaspoon of dressing and top with the divided chicken. Top with the tomatoes, more dressing if desired, cheese and broken chips. To serve garnish plate and salads with cilantro if desired – makes 6
