Frijoles Street Corn

Frijoles Refritos

Classic elote (street corn) gets a twist by replacing traditional mayonnaise and butter with Del Real Foods Frijoles Refritos. These flavorful ears of corn can be prepared and enjoyed outside with just a few ingredients and a hot grill. These are best when served warm, but with sweet roasted corn spread with delicious beans and topped with cheese, they won’t last long enough to cool-off.

  • ¼ cup Del Real Foods Frijoles Refritos, room temperature or heated through.
  • 4 ears of corn, shucked
  • ¼ cup crumbled queso fresco
  • ¼ cup shredded Monterey Jack Cheese
  • ¼ cup crumbled cotija
  • 1 lime quartered
  • ¼ cup chopped cilantro
  • Chile en polvo seasoning, or chile powder to taste

Roast corn on a hot grill, covered for 10 minutes, turning halfway through. Time might vary depending on grill temperature, adjust as needed until hot and lightly charred. In a shallow dish combine cheese, chile en polvo, and cilantro. When corn is roasted, carefully remove from grill and spread each ear with Del Real Foods Frijoles Refritos, roll or pat on cheese and cilantro mixture. Top ears with additional chile en polvo seasoning as desired, and serve with lime wedge.
