Fiesta Chicken Mac N Cheese

Shredded Chicken

This recipe for Fiesta Chicken Mac N Cheese makes for a perfectly cooked elbow pasta with a smooth and creamy cheesy sauce complimented with a zesty chicken mixture will be sure to please all kids and adults alike!

  • 1 tsp. oil
  • 2 c. Del Real Shredded Chicken
  • ½ c. chopped yellow onion
  • 1 c. diced tomatoes
  • ½ tsp. garlic powder
  • ¼ tsp. black pepper
  • ½ tsp. salt
  • 2 c. elbow pasta
  • 1 Tbsp. butter
  • 1 ½ Tbsp. flour
  • 1 c. half and half
  • 2 oz. cream cheese
  • 2 c. grated medium cheddar cheese
  • ½ tsp. salt

In a medium saucepan heat oil over medium-high heat. Add chicken and sauté until chicken is warmed through. Add the onion and sauté until onion begins to turn soft, approximately 2 minutes. Add the diced tomatoes, garlic powder, black pepper, and salt. Cook until the tomato is softened and starting to dissolve, approximately 2-3 minutes. Set aside. In a medium stockpot melt 1 Tbsp. butter over medium heat. Add the flour and whisk into the butter. Continue cooking and whisking over medium heat for 2 minutes. Add the half and half while continuing to whisk until the half and half is heated through. Add the cream cheese. Continue whisking until the cream cheese is melted completely. Add the grated cheddar cheese 1 cup at a time, melting the cheese completely before adding the next cup. Add the salt and whisk. Set aside. Fill a large stockpot ¾ full with water and heat over high heat and bring the water to a boil. Add the elbow pasta and cook until pasta is done, approximately 8 minutes. Drain the pasta. Add the cheese sauce to the cooked macaroni and mix until the macaroni is completely covered in the cheese sauce. Gently fold in the fiesta chicken. Serve immediately!
