Fiesta Chicken Chowder

Del Real shredded chicken

Children of all ages loved this chowder. My kids like spicy so I used pepper jack cheese and a medium heat salsa but plain jack and mild salsa could be substituted. The thickness of the chowder is due to the creamed corn so less cream or half and half is used. IT is also a nice fast chowder – served with a salad or even corn bread would round out the meal.

  • 1 tablespoon butter
  • 1 small sweet onion, chopped
  • 2 cups Del Real shredded chicken
  • 1- 15 ½ ounce jar chunky tomato salsa (mild or medium)14 ounce can creamed corn
  • 1-14 ounce can creamed corn
  • 1-8 ounce chunk of jack cheese, shredded ( pepper or plain)
  • 2 cups chicken stock
  • 1 cup half and half cream
  • 1 /3 cup sour cream ,optional
  • ¼ cup tortilla strips or crumbled pieces , optional

Heat butter in a saucepan until melted. Add onion and saute until softened 3-4 minutes over medium heat. Add in the chicken and saute with onions 4-5 minutes. Then add the salsa and corn . Stir and cook 2-3 minutes to warm through. Melt in the cheese , stirring for a couple of minutes then add the stock and cream. Heat over low heat 5 minutes. Cover and keep on low until ready to serve within 15 minutes or refrigerate. To serve place ladle full in bowl and top with sour cream and tortilla strips if desired. Serves 8
