Delicious Shrimp Verde Tostadas

Refried Beans, Salsa de Molcajete Verde

These tasty tostadas are easy to prepare with the help of Del Real foods! The shrimp only need a quick saute to get a ton of fire-roasted flavor from the Salsa de Molcajete Verde, and the beans provide a protein-packed (and entirely Gluten-Free!) and authentically delicious base for all that flavor. This dish is a perfect match for margaritas or iced tea al fresco – patio or poolside dining at it’s best!

  • 2 Gluten Free corn or potato tortillas
  • 1 tbsp olive oil
  • 1/2 lb medium shrimp, peeled and deveined
  • 1/4 cup Del Real Salsa de Molcajete Verde
  • 1/2 cup Del Real Frijoles Refritos
  • shredded lettuce
  • diced tomato
  • green onion
  • lime wedges

Preheat oven to 375 degrees. Coat a sheet pan lightly with gluten free pan spray. Place the tortillas on the sheet pan and bake for 5 minutes. Turn the tortillas carefully with tongs or a spatula and bake for an additional 5-7 minutes, until edges are brown and tortillas are crisp. Allow to cool. Heat the olive oil in a large skillet over medium-high heat, and then add shrimp and salsa. Saute shrimp for 5-7 minutes or until they are cooked through. Warm the beans according to package directions. To assemble the tostadas: - spread half the beans on each tortilla, then add shredded lettuce - top each tostada with half of the shrimp and salsa - add tomatoes and green onion, serve with a lime wedge Enjoy!
