Slow Cooker Chicken Tortilla Soup

Crock Pot Chicken Tortilla Soup

Pollo Asado, Freijoles Negro, Salsa de Molcajete Roja

Chicken tortilla soup with Pollo Asada from Del Real Foods

Serves 6

15 Minutes

3.5 Hours

  • 16 oz low-sodium chicken broth.
  • Two medium tomato, diced.
  • One yellow onion, finely chopped.
  • One bell pepper cut into small strips or chopped.
  • Four cloves of garlic, pressed through a garlic crusher or finely chopped.
  • 1 tsp chili powder.
  • 1 tsp ground cumin.
  • 1/2 tsp paprika.
  • 1/2 tsp ground coriander.
  • Salt and pepper to taste.
  • 16 oz Pollo Asado(grilled chicken leg meat).from Del Real Foods.
  • 1 can Freijoles Negros (black beans) from Del Real Foods.
  • 1 cup of cobbed corn (froze, fresh or canned).
  • 1 Tbsp of fresh lime juice.
  • 1/2 cup fresh chopped cilantro.
  • Optional: For extra vegetables you can add chopped celery.
  • For serving:
  • Tortilla strips or chips.
  • Shredded cheese.
  • Diced avocado.
  • Diced tomato.
  • Sour Cream.
  • Salsa de Molcajete Roja from Del Real Foods.

Add in to slow cooker: broth, diced tomatoes, onion, garlic, seasoning and Pollo Asado. Cover and cook on low for 3 hours. Since chicken is fully cooked you can cook for less time too. Remove chicken and shred and put back in slow cooker. Add black beans, corn, cilantro and lime juice. Cook 1/2 hour. Serve warm with tortilla strips and cheese. Top with sour cream and avocado.
