Coyote Quesadilla Mexican Lunch

Seasoned Shredded Beef, Arroz, Frijoles Refritos

Kids will go crazy for this fun Southwestern themed lunch featuring a coyote quesadilla, cheese moon, melon cactus, and beans and rice desert.

Serves 1

5 Minutes

  • "1 Wheat Tortilla
  • 2 Tbsp Del Real Seasoned Shredded Beef
  • 2 Tbsp Shredded Mexican Blend Cheese
  • 1 slice white cheese
  • 1 slice honeydew melon
  • 1/4 cup Del Real Rice with Vegetables
  • 1/4 cup Del Real Refried Beans"

"1. Heat the Del Real Seasoned Shredded Beef, Rice with Vegetables, and Frijoles Refritos according to package directions. Set aside. 2. Cut the honeydew melon with a cactus cookie cutter or paring knife. Set aside. 3. Cut a moon shape from the white cheese with a circle cookie cutter or kitchen shears. 4. Cut two coyotes out of a wheat tortilla with a coyote cookie cutter or kitchen shears. Put shredded cheese and Del Real Seasoned Shredded Beef between the tortilla pieces. Microwave approximately 20 seconds or until the cheese is melted. 4. Assemble lunch by putting a layer of Del Real Refried Beans on the bottom of the plate. Next add a layer of Del Real Rice with Vegetables. Place the coyote quesadilla and melon cactus above the rice layer. Finish off the plate with the cheese slice moon. "
