Chili Cheese Tamale Rolls

Cheese & Green Chili Tamales, Pollo Asado

  • 8- 6” eggroll wrappers
  • 2- cheese & chili tamales (Del Real)
  • 1 cup- diced pollo asado breasts (Del Real)
  • ½ cup- diced avocados
  • ½ cup- diced fresh tomatoes (squeezed of excess moisture)
  • ¼ cup- chopped cilantro
  • ¼ cup- Monterey Jack Cheese
  • 1 tsp- cumin
  • ½ tsp- salt
  • Water (for sealing egg rolls)
  • Oil (for frying)

Heat frying oil to 365 degrees. Take the tamales and cut off the bottom end. Quarter them lengthwise. Place pollo asado, avocados, tomatoes, cilantro, cheese, cumin and salt in a mixing bowl and combine. Take your eggroll wrapper and lay down one piece of tamale and a ¼ cup of the chicken mixture. Wrap it according to the eggroll wrapper directions. Seal the wrapper with a dap of water. Repeat with remaining 7 rolls. Fry until medium golden brown. 2-3 minutes Tip: Fry right away or moisture in the tomatoes will break down the wrapper otherwise.
