Carnitas in the Centro

Del Real Carnitas

This recipe is perfect for my favorite meal of the day: Brunch.  I like sweet, but love savory and this dish has hints of spice from the jalapenos, salty from the pork and there’s a lightness from the fresh avocado and tomatoe salad on top.

  • 1.5 cups corn meal
  • 1.75 cups flour
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1 Tablespoon finely chopped jalapenos
  • 2 cups buttermilk
  • 2 eggs, separated
  • 1/4 cup butter, melted
  • 1 T. maple syrup or honey
  • Del Real Carnitas
  • 1/4 cup finely chopped onion
  • 2 T jalapenos
  • Garnishes
  • tomatoes tossed with salt and olive oil
  • fresh avocado
  • 1 sunny side up egg or poached
  • 1/4

For the waffle: 1. Saute a package of Del Real Carnitas with 1/4 cup chopped onion and 2 Tablespoon jalapenos until warm and onions are translucent and jalapenos are soft. Set aside. 2. Whisk all dry ingredients including 1 tablespoon of jalapenos. Stir in buttermilk, egg yolks, butter and honey until smooth. 3. Whisk egg whites until thick stiff and fold into waffle batter. 4. Heat up waffle iron, pour 1/2 cup of batter onto a hot iron, put the carnitas in the center of the waffle and top with a little bit more waffle batter to cover the pork. Cook until waffle indicates waffle is done. 5. Top waffle with sunny side up egg, fresh avocado and tomatoes dressed with olive oil and salt.
