Carnitas Crusted Tamale Macaroni n’ Cheese

When I was little, I loved my mac n’ cheese, but also loved those crispy pieces of pork roast left in the pan! This was my inspiration for melding the best of both worlds into one tasty, kid-friendly dish. This mac n’ cheese is sure to satisfy kids of all ages! The tamales come through in the macaroni as well as a subtle spicy hit (from the salsa) just at the tail end of the bite. The Carnitas “crust” adds flavorful texture and you’ll find yourself possibly using your hands to pick up any extra morsels left on the plate!

  • 2 cups uncooked elbow macaroni
  • 2 Del Real cheese Tamales, cut into smaller pieces
  • 1/2 cup Del Real Salsa de Molcajete Roja (Fire Roasted Red Salsa)
  • 1/2 tsp. ground tumeric (this adds more color)
  • 1 tsp. dijon mustard
  • 4 eggs
  • 3/4 cup buttermilk
  • 1/4 cup butter, divided into 2 tbsp. each
  • 6 slices american cheese, sliced into smaller squares
  • 4 cups fresh, fine grated sharp cheddar cheese, divided into 3 cups + 1 cup
  • 1 16 oz. pouch Del Real Carnitas

1. Preheat oven to 375 degrees 2. Spray 2 8x8 baking pans with cooking spray 3. Heat carnitas meat for 2 minutes, according to initial package instructions. (You'll complete the heating just before serving.) 4. Place macaroni in 3 cups water, in a skillet and boil for approximately 10 minutes, or until al dente. (Macaroni will cook a little faster when spread out into a skillet.) 5. In a high speed blender (or food processor), blend tamales, salsa, turmeric, mustard, eggs, 2 tbsp. butter, 3 cups sharp cheddar cheese and buttermilk until well blended, thick and steamy (approximately 4 minutes on high speed blender). 6. Drain warm macaroni noodles and toss with 2 tbsp. butter and american cheese squares in a large mixing bowl. 7. Gently toss in remaining 1 cup sharp cheddar cheese and wet tamale mixture into noodles until well coated. 8. Divide tamale macaroni & cheese into 2 8x8 inch baking pans. (Don't worry if mixture looks loose...it will tighten up more during baking). 9. Top each pan with shredded carnitas meat. 10. Cover and bake in preheated 375 degree oven for 20 minutes.(Keep in mind oven temps. may differ, so adjust accordingly.) 11. In last few minutes, before serving, broil top of macaroni & cheese until carnitas crisps slightly. 12. Turn oven off, recover, and keep warm until ready to serve. (Macaroni will continue to set upon cooling). Enjoy!
