Burritos Carnitas with Mango Salsa


A yummy, fruity salsa perfectly complements the salty pork of the carnitas!

Serves 4

1 Hours

  • 2 tablespoons olive oil
  • 1 tablespoon cider vinegar
  • 2 teaspoons sugar
  • 1 ripe mango
  • 1 tomato
  • 1 serrano pepper
  • 1 package Del Real Foods Carnitas
  • 1 package Del Real Flour Tortillas

Peel and chop the mango. Chop and seed the pepper, and chop the tomato. Combine with the olive oil, vinegar, and sugar in a bowl. Allow flavors to meld for at least 1 hour. While the salsa is melding, heat the carnitas in a medium sauce pan, and toast the flour tortillas using a large cast iron skillet. Combine pork and salsa on the tortilla, wrap up and enjoy!
