Barbacoa Sliders

Barbacoa (Beef Pot Roast)

Barbacoa sliders with caramelized onions, quail egg, and cilantro mayo

Serves 4

  • Kings Hawaiian Sweet Rolls
  • Yellow Onion
  • Brown Sugar
  • Apple Cider Vinegar
  • Quail Egg
  • Mayonaise
  • Cilantro

Start by thinly slicing one onion. Then add a tablespoon of oil to a sauté pan over medium heat. When the pan is hot add the onions, seasoning with salt and pepper, and two tablespoons of brown sugar. Toss the onions to mix everything together. When the onions start to brown, add a Tablespoon of Apple Cider Vinegar and continue sautéing until browned, about 10 more minutes. When the onions are done, transfer to a dish to cool. Wipe out the pan and return to medium heat with another tablespoon of oil. While the Onions are cooking, heat the Barbacoa Beef in the microwave according to directions. When the Barbacoa is done resting, shred the Beef with a fork to break up large pieces. Next, add 1 cup of Mayonnaise and one bunch of Cilantro to a food processor. Season with salt and pepper and pulse until the Cilantro is incorporated into the Mayonnaise. In the sauté pan, carefully crack one Quail Egg and cook for about 2 minutes for a sunny-side up egg. Quail Egg shells are tricky to crack so you can use a paring knife to help open the shell without breaking the yolk. When the egg is cooked, slide onto a plate to rest. With the pan still hot, lay the cut side of Hawaiian Sweet rolls down in a little oil and toast until golden brown, about 2 minutes. Assembling the sliders starts by coating each half of the toasted roll with the Cilantro-Mayonnaise. Then top with a portion of the Barbacoa beef, one Quail Egg, and a little caramelized onion.
