Baked chicken and black bean salsa flautas

Pollo Asado

  • Flautas:
  • 1 ½ cup diced pollo asado
  • 1 cup diced red bell pepper
  • 1 can black beans (rinsed and drained)
  • 1 can corn (rinsed and drained)
  • ½ cup monterey jack cheese (shredded)
  • ¼ cup chopped cilantro
  • 1 tsp favorite hot sauce (optional)
  • 1 tsp cumin
  • ½ tsp garlic powder
  • ½ tsp salt
  • 10-12 flour tortillas (8 inch)
  • Egg white wash
  • Lime cilantro cream sauce:
  • 1 cup sour cream
  • 1 cup chopped cilantro
  • ¼ cup lime juice
  • 1 tsp favorite hot sauce
  • ½ tsp salt

Flautas: 1. Preheat oven to 425. 2. Place pollo asado, bell pepper, black beans, corn, cheese, cilantro, hot sauce, cumin, garlic powder, and salt into a mixing bowl. 3. Mix until even. 4. Grab a tortilla and spread ½ cup of the filling mixture evenly across the center leaving 1 inch of room on each end. 5. Roll tightly and place seam down on a wire rack lined baking sheet (or lightly greased baking sheet). 6 Repeat with remaining tortillas and filling. 7. Brush each flauta with an egg white wash. 8. Bake 12-15 minutes or until golden brown. Lime cilantro cream sauce: While flautas are baking. Place all the ingredients into a blender and blend until smooth. Serve with warm flautas. Tip: Double (or triple) the flauta recipe and freeze the remaining unbaked flautas. Baked frozen flautas for 20 minutes at 425 for a quick meal.
